Tobin Ellis, bar consultant and award-winning bartender, led a 60 minute seminar on "Inside Out Bar Design" at this years Nightclub and Bar Show in Las Vegas. His company, BarMagic of Las Vegas, designs bars, hotel bars, restaurants, and other hospitality concepts all over the world. Ellis explained to the more than 50 attendees, mostly bar owners and operators from as far off as New Zealand and Australia, some of the key mistakes operators make with architects, general contractors, and interior designers as well as winning strategies for bar design and operational design. BarMagic is currently developing and supervising the construction of three unique beverage concepts in the United States, directly on the heels of opening five more full-service restaurants with fresh beverage programs for a national client in 2012. Schaefer Pairs Dinner with Famed Brewmaster
Brooklyn Brewery Brewmaster and author Garrett Oliver led a beer dinner for 97 lucky guests at Shadows on the Hudson in Poughkeepsie, NY this week with help from BarMagic’s Kristen Schaefer. Working with Shadows bar manager Matt Henry and Beverage Specialist Jason Davey, Schaefer led the trio during the service of 800 beers as well as her own creation, The Oliver Twist, a beer cocktail showcasing Brooklyn Chocolate Stout. Schaefer mixed the stout with Godiva Dark Liqueur and Banfi Rosa Regale; she finished it with a strawberry and vanilla air. Shadows manager Milti Kastanis said Schaefer’s drink was “executed perfectly” and “a highlight of the evening" and that Oliver was "blown away" by the drink in how well it brought out the essence of the stout, rather than masking it. BarMagic has been pairing cocktails with food for eight years and also develops beer, wine and champagne based cocktails for clients regularly.

BarMagic conducts Spirit Tasting and Guest Appearance in NY
BarMagic's Tobin Ellis and Kristen Schaefer conducted spirit training/tastings for the staff of Shadows on the Hudson, the 22,000 square-foot restaurant and lounge BarMagic helped develop and opened earlier this year. Mr. Ellis also created two new gourmet drinks for guests from the specially designed "Mixology Tower" which Ellis helped design with owner and general contractor Joe Bonura. The Tower is a bar within a bar, a specialty "prep kitchen" and platform for in-house and guest mixoloigists to drive the high-volume mixology program in place at this very busy waterfront nightspot and restaurant as well as from where specialty drink features are made each weekend. The tower has been manned by living legend Gary Regan and NY-based mixology gurus Charlotte Voisey and Alan Katz in its short tenure so far. Ellis took the tower this weekend to unveil a Cotton Candy Collins that was finished with a mandarin orange and Aperol espuma and was topped with a dried candied clementine and also the simple but sublime Gin & Brown: an old-fashioned, authentic Gin & Tonic made from a housemade tonic water that is brewed using a South American tree bark, and then mixed with NY-style hand-charged seltzer water and Martin Miller London Dry Gin. The tasting, training and guest appearance were underwritten by Skyy Spirits.

Throwdown Rematch in New York
On the hit TV series Throwdown with Bobby Flay, the Iron Chef’s original cocktail “The Throwdown” beats out Tobin Ellis’ “Serengeti” by a narrow margin. But what they don’t tell you on air, is that unlike every other competitor to appear on the show, Ellis was required to enter a brand new, unproven recipe in the competition instead of his signature recipe, the Raspberry Mojave. So recently Shadows on the Hudson near the Culinary Institute of America in Poughkeepsie, NY decided to hold their own Throwdown during dinner. For $14 guests were served both cocktails and given a voting ballot. The results? Mojave: 34, Throwdown: 1. The Mojave also won “Best Drink” on The Food Network Challenge Bartender Battle in Miami in 2006 and remains the #1 selling specialty cocktail at Shadows on the Hudson. BarMagic opened Shadows in January of 2007.

BarMagic Caters Spirited Dinner at The Greenbrier
In-line with BarMagic's reputation for being on the cutting-edge of drink trends, a team of five BarMagic specialists created a gourmet cocktail menu to pair with Chef Michael Voltaggio's Tasting Dinner for the Advisory Board of The Greenbrier resort this evening. Chef Voltaggio is a Molecular Gastronomist and BarMagic worked with the former protégé of Charlie Palmer to develop a menu that paired with his flavors and also included several Molecular Mixology components including a spiced ginger caviar, tableside caramelization, hot tea infusion, and a peach-lime espuma. The event was taken one step further by adding in sound, lighting and video production that included weaving in a number of choreographed flair components to the preparation and service of the cocktails. The dinner was a sneak preview of the 5-diamond resorts newest restaurant, Hemisphere, and upscale lounge 38'80. Both are slated to open in July of 2007 and are part of a $50 Million Renovation Project The Greenbrier is in the midst of. BarMagic is The Greenbrier's nightlife and beverage consultancy for this 3-year project and has been on-site since December of 2006. Spirited or Cocktail-Paired Dinners are an emerging trend in fine-dining and BarMagic began pairing cocktails with chef's menus in 1999 with an award-winning beverage program in Upstate New York. BarMagic also began an infusion program that same year with six different infusions and paired cocktails designed around the infusions.

Tobin Ellis takes 3rd place in Blue Blazer International Competition
[Las Vegas, Nevada] BarMagic's Tobin Ellis took home the 3rd place trophy in a new event which showcases bartenders who can seamlessly perform classic and creative mixology with precise flair bartending. The event fielded 16 competitors from the US, England, Italy, Argentina, Uruguay and Denmark in a two-day format where the focus was on perfection of both drink-making and bottle-flipping. Unlike most flair events where spills and drops are minor deductions, Blue Blazer has a much stricter format, in an attempt to highlight those bartenders who excel at the craft of pouring cocktails while also entertaining guests with clean, exciting flair. Uruguay's Oscar Perez won top honors and the "Blue Blazer" itself (a logo'd blue sport-coat) and Argentina's Juan Llorente took second place, edging out BarMagic's Tobin Ellis by 20 points out of 800. In a competition review written by FBA President & CEO Jim Allison, Ellis' performance was quoted as receiving "highest marks on creative mixology" and that his "blending of mixology and unique flair was top of the heap." Allison goes on to say that "Toby's drinks were also notably some of the best of the competition." Mr. Ellis' original cocktails for this event included the Tangerine Cosmopolitan and the Raspberry Mojave. The event is named after the famous drink by legendary bartender Jerry Thomas who was history's first celebrity bartender who was both an avid mixologist and a revered showman who poured a fiery stream of scotch and water during shows he performed all around the world in the mid 1800s. The competition will be available for purchase on DVD in late February or early March.

BarMagic's Tobin Ellis featured on FoodTV again
[United States & Canada] Tonight at 1am (PT/ET) FoodTV's most popular show, Unwrapped will air an episode entirely devoted to bartending, entitled "Happy Hour." Along side pieces on Bacardi Rum, Maker's Mark Bourbon, and rum cake is a six-minute segment on the Legends of Bartending World Championships with interviews and flair demonstrations and instruction by BarMagic's Tobin Ellis. FoodTV aired a one-hour special again this year on Legends featuring Ellis and many other top flair bartenders. Ellis first appeared on FoodTV back in 2000 on their show "In Food Today" as the first flair bartender to ever appear on the network. In the 2000 piece, Ellis prepared one of the specialty margaritas of his award-winning Margarita Menu from The Stoop, a bar he overhauled to critical acclaim in central New York. In this most recent piece, Ellis prepared a variation on a raspberry Mojito made with fresh raspberries, fresh mint, Finest Call Sweet & Sour Mix and Skyy Berry Vodka. An interesting sidebar: Ellis began creating and serving fresh fruit Mojitos and similar muddled cocktails at all his private functions 2 years ago, before any other bar, lounge, restaurant, or caterer in the Las Vegas market had done so. Now, fresh-fruit mojito's and other hand-muddled fruit cocktails are found on the cocktail lists of almost every high-profile lounge and restaurant in the city. Ellis credits his inspiration for these drinks to a Cuban bar manager he worked under at Tavern on the Green in Manhattan in 2000 as well his work with Australian Bartender Magazine (1999-2000) where he was a columnist for several years. The airing of this latest FoodTV segment comes just hours after Ellis' 34th birthday.

BarMagic's Tobin Ellis and High Spirits' Ken Hall team up to open the newest nightclub in Las Vegas
[Las Vegas, Nevada] On Friday, July 2nd the newest nightlife venue on the Las Vegas Strip opened to a packed house with a performance by Carmen Electra and her group of Burlesque dancers. Tangerine, the strip's first and only street-level indoor/outdoor nightclub, is TI's long-awaited nightclub that is built overlooking the lagoon where the recently-debuted "Sirens" show takes place each night. The club features three VIP areas complete with bottle service, two DJs spinning vocal house and other styles, live steel and bongo drum players on the outdoor deck, nightly burlesque performances inside the club, and a DJ-booth two-floors above the outdoor deck that overlooks one of the busier tourist street corners in the world. Hall and Ellis worked in tandem on all aspects of the opening including drink development and also training the bar and cocktail staff of more than 50 employees. Since opening night, the club has shattered sales projections and the specialty cocktail list (also developed with Francesco Lafranconi) is a run-away success that features a wide range of specialty tangerine cocktails like the Muddled Tangerine Mojito and the unique Tangerine Cosmopolitan. Tangerine is a partnered club between TI and the company that owns and operates Coyote Ugly (NY/NY), Bikinis (Rio) and Fat Tuesday's (multiple locations). Hall has opened a number of high-volume outlets in Orlando and Las Vegas, most notably the world-acclaimed VooDoo Lounge where he also bartended for seven years. Ellis has trained staffs, developed drink programs, and opened nightclubs, bars, and restaurants in New York, Washington DC, Mexico City, Colorado, SE Asia, Hawaii and Las Vegas including the now-famous Shadow Bar at Caesars Palace and Jackie Chan's restaurant and bar in Honolulu, Jackie's Kitchen which opened this past December. Also involved in the training and opening is long-time veteran bartender Tony Rossi, formerly of Pleasure Island/Disney in Orlando. The Tangerine deck is open seven days a week beginning at 11am, and both the indoor and outdoor club is open Tues-Sat until 4am. For more information, visit www.tangerineclub.com.

BarMagic's Tobin Ellis to appear on Food Network's top-rated show,
While the top competitive bottle-flipping bartenders were preparing their shows for the World Finals of the Legends of Bartending last Tuesday evening, BarMagic's Tobin Ellis, (a former top-10 competitive flair bartender) was backstage filming a six-minute segment for the Food Network's hit show Unwrapped. Ellis was interviewed about bartending secrets, drink trends, and asked to demonstrate his unique blend of flair bartending and high-volume mixology which a number of high-profile, high-volume nightlife venues have been hiring BarMagic to train to their staffs. Ellis prepared a fresh Raspberry Mojito derivative and demo'd three basic flair tricks for the cameras. This is Ellis' second feature piece on Food Network which reaches more than 80 million households in a number of countries besides just the United States. Previously, Ellis was asked to prepare one of his award-winning Margaritas (that were part of highly-profitable beverage program created for an upscale eatery and cocktail lounge in upstate New York) on the show In Food Today back in 2000. BarMagic has been teaching and demonstrating this highly-specialized style of bartending for more than seven years, a style that is a fusion of old-school nightclub/speed bartending, cutting-edge working flair, classic mixology and creative, trend-setting drink design. This holistic and profit-centered approach to training has helped earned BarMagic some of the highest-profile training contracts in the world including for Caesars' Palace (Shadow Bar), Tavern on the Green (Garden Bar), and Jackie Chan's Restaurant and Bar (Jackie's Kitchen). Mr. Ellis credits much of his success in drink design and bartending to working side by side with a wide range of top bartenders in and outside of the flair world in New York, Washington D.C., Atlanta, Italy, England, and Las Vegas including a number of world-champion mixologists and flair bartenders.

BarMagic Beverage Development #1 with Jackie Chan's New Concept
[Honolulu, Hawaii] While on location in Waikiki, Hawaii conducting a specialty bartender training program for the staff of Jackie Chan's first restaurant in North America, Jackie's Kitchen, BarMagic helped develop and brand one specialty drink for the high-profile restaurant and bar that opened the day after Christmas. Of all the beverages served, the only one dusted with some BarMagic also happens to be.... the outlet's #1 bestseller. The "Two Story Wipeout" name and overall beverage concept was designed by BarMagic to reflect both the local Hawaiian lifestyle and also pay homage to the super-star Jackie Chan. A multi-layered margarita with a balance of both sweet and tart flavors, the signature drink of Jackie's Kitchen comes in a souvenir logo'd glass and sells for $10.95 with a pour cost of $1.86 or 17%. Bar Manager Cache Bouren, who took the concept and drink formula and fleshed out the ingredients and presentation, says it is by far their most popular cocktail and the management is thrilled with the margins the drink is generating. BarMagic has been designing award-winning specialty drinks and entire beverage programs since 1998 all around the world including for special events for the Billboard Music Awards, and a number of other private celebrity events in both New York and Las Vegas.

BarMagic named Agency of Record for 6th Annual Skyy Vodka Legends of Bartending World Championships
[Las Vegas, Nevada] When the largest and most prestigious world bartending competition kicks off on March 8th in Las Vegas, every piece of marketing, advertising, and promotion will be courtesy of BarMagic who was selected to strategize, design, and execute all aspects of the nationally-televised event by Legends creator and organizer, 4-time World Champion Ken Hall of High Spirits Enterprises. BarMagic has been one of High Spirits' marketing design partners for the last year and has produced the company's last 3 DVD highlight video reels and DVD packaging design as well as most of its event flyers and logos. BarMagic also successfully promoted the first sell-out of Legends in 2002. Now that Legends has moved from a 1,200 seat venue to the 7,000 seat Theatre for the Performing Arts at the Aladdin Casino, much more aggressive marketing, advertising, public relations, and promotional strategies are called for. From the event dura-trans, posters, flyers, and print ads to the 30-second video advertisement that will play on the six 85-square foot video walls at McCarran Airport every 30 minutes for four days prior to the event, BarMagic is orchestrating every aspect of the campaign. BarMagic principal Toby Ellis will draw heavily on his early experience promoting concerts for Bob Marley's Wailers and Meatloaf back in college in the early '90s where he helped produce two back-to-back sell outs of the event, selling more than 5,000 tickets to an event that had never surpassed 2,500 tickets in its previous 30 years. For more information about the Skyy Vodka Legends of Bartending visit www.legendsofbartending.com and to purchase tickets, visit www.ticketmaster.com. Legends is a High Spirits Enterprises Production.

BarMagic Beverages part of a new McDonald's Happy Meal?
[Las Vegas, Nevada] When BarMagic was brought in to provide specialty gourmet cocktail catering for the birthday party of the Executive Vice President of McDonald's USA in beautiful Lake Las Vegas, it came as no surprise that the catering was provided by a local restaurant of the world's largest fast food chain. Side by side with Quarter Pounders and Apple Pies, the BarMagic Caramel Apple Martinis, Fresh Raspberry Mojitos and Mint Chocolate Chip Martinis seemed an odd, but well-received pairing. Once again BarMagic unique combination of award-winning designer drinks and world-class flair bartending were a smash hit. The evening's guest list was a veritable Who's Who of Las Vegas socialites and business moguls... several of who flew in just for the special occasion. But don't look for BarMagic's McMai Tai's at your neighborhood Golden Arches any time soon.

BarMagic to return to SE Asia for construction of world's first flair-designed nightclub
[Kathmandu, Nepal] Plans are underway for BarMagic principal Toby Ellis to return to Kathmandu, Nepal this quarter to oversee the construction of what is suggested by most experts to be the first nightclub in the world specifically designed to showcase high-volume working flair in an A-venue environment. While a number of successful beverage outlets in the world including a small handful of nightclubs and A-list lounges have included flair-training, top flair bartenders, and flair-savvy consultants; this may very well be the first time in bar & beverage history that a venue was actually designed BY a flair bartender and built to specifically showcase flair bartending, all in an upscale, high-volume setting. The closest runner-up to this feat would be the ambitious but short-lived The View concept, a steakhouse turned after-hours at Harrah's Casino in Las Vegas that featured top flair bartenders including 12-time world champion, Christian Delpech. The details of this latest BarMagic concept have been kept under close wraps since the project began in the spring of 2003. The last flair-based venue BarMagic's Toby Ellis helped develop and open was the massively successful Shadow Bar at Caesars Palace Las Vegas. Despite a number of internal struggles and changes within the Caesars Management, Shadow has continued to be a top-grossing outlet for the world's second-largest casino giant, Park Place Entertainment. Ellis provided a host of concept development services, training, and opening support including beverage development, schematics and staffing plans, property-wide flair training, highly successful public relations (which put Shadow on national TV twice and in the industry media on 3 continents in its opening week), and of course, a host of operational bar systems. No opening date for Ellis' latest concept have been released, though projections are for sometime in the summer of 2004.

BarMagic to develop nightclub concept in Southeast Asia
[Kathmandu, Nepal] BarMagic wins contract for complete concept development and operational consultation for a nightclub project in the capital city of Nepal, Kathmandu. BarMagic will be wholly responsible for every aspect of the concept, build-out, systems, training, promotion, marketing, and opening of the first modern nightclub in the country's history. While concept development begin in May, on-site work officially began in July when Toby Ellis headed to Kathmandu for site selection, market analysis, and initial recruitment and training. The upscale nightclub will feature bartenders trained in a modified style of working flair which requires extensive training, as not only flair, but basic technical bartending is a completely new concept to this developing nation. Despite its history of political and economic challenges, the Kingdom of Nepal and Kathmandu in particular has been a tourist mecca for decades as Kathmandu is the closest major city to Mt. Everest. A recruitment ad which ran for one day in one local paper turned-out more than 200 eager applicants for just 12 positions in the first two hours of the job fair; the hiring clinic had to be closed due to over-capacity occupancy in the host hotel, the upscale Marco Polo. 126 applicants who made it through initial screening were interviewed and auditioned for these highly sought-after positions over the course of two days and final selection yielded 12 candidates who began a 40 hour course in basic flair mechanics. The candidates will then self-study and train for a minimum of 4 months at which time they will formally audition for the positions and begin another 120 hours of training. This will be the sixth complete customized bar staff training BarMagic has implemented since 2000 and the second time BarMagic principal Toby Ellis has introduced the concept of flair on a mass level to a new country.

BarMagic and Randy Davila create and launch LAS at MIST
[Las Vegas, Nevada] After working together on a series of artistic nightlife special events at the summer hotspot, Hush in the Polo Towers, BarMagic's Toby Ellis and rising-star promoter Randy Davila launched yet another innovative nightlife promotion this month at MIST in the Treasure Island Casino. Davila was approached by Light owner Andrew Sasson at one of his "The Secret Spot" events at kitsch restaurant Marrakech about bringing his A-list crowd and refined style to their new cocktail lounge to build an otherwise slow night. Davila and Ellis concepted and launched the Local Artists Showcase on Tuesday nights, going head to head with Goliath Studio54 who has otherwise owned Tuesday nights in Vegas for three consecutive years. The Spotlight Series features local artists and models being showcased with a video reel played on MIST's two large-format plasma screens, as well as a custom gourmet designer signature cocktail menu created in their honor. Artists featured include model Creole Walker who credits most notably include Oceans 11, world-famous local designer Wayne Van Wynn most known for dressing Dennis Rodman for the Cover of Sports Illustrated, and other fashion labels and designers, the likes of which include ready-to-explode clothing label Von Dutch. The Tuesday night promotion has been so well-received by locals and the media, Light impressionar Sasson has already talked of bringing the pair on board at their flagship high profile nightclub, Light at the Bellagio. This is the first time Light owners have brought in an outside promoter on a recurring basis for any of their venues in Las Vegas. Perhaps a savvy move, considering Tuesdays at MIST quickly became -the- place to be, prior to the late night party at Studio54 and also already spawning a number of copycat "fashion" and "artist" promotions at other A-list venues in town.

Social Mixology in Vegas - Sun Dec 5 & Sun Dec 12
Social Mixology pops up twice in December in Las Vegas:
1. Our 3rd annual repeal day celebration Sunday December 5th at Herbs & Rye on Sahara. Authentic period attire is strongly suggested. Google "Boardwalk Empire" for ideas. Star Costumes on Valley View at DI has great 3-day rentals. More details including time, password and more to follow, stay tuned.
2. Celebrate the Chairman of the Board's birthday with us Sunday December 12th as we honor Vegas' Legend of Legends, Frank Sinatra. Men in jackets, ties, and hats; ladies in dresses and heels. As always, exact location, password, etc. are kept quiet until days before the event. Stay tuned.
SMX events are 21 and over with proper ID.
